A Salute to National Burger Month


Whoever designated May as National Burger month, I’d like to give them a big, sloppy, onion-scented, cheese-covered kiss on the mouth. Or perhaps a hug will do. What better way to celebrate our national sandwich than to look back at the delicious burger recipes we have in our archives.

Spicy Cheese and Beef Muffins


It’s Quick and Easy – Enjoy!

 
 
Drop biscuit batter in the bottom of buttered muffin tins, top with cooked ground beef tossed with minced pickled jalapenos and finish with a big pinch of shredded pepper jack cheese. Bake in a 350° oven until the dough is done and the cheese melts, about 15 minutes. Sprinkle with chopped cilantro.

Teri’s Taco Soup


I cannot begin to tell you how delicious this soup is. I know it seems like there are a lot of ingredients, but really it is just a lot of opening and dumping....soooo easy!  This makes a nice big pot of soup, and everyone who tried it loved it!


Ingredients:

·         2 pounds ground beef
·         2 cups diced onions
·         2  cans pinto beans
·         1  can pink kidney beans
·         1 can whole kernel corn, drained
·         1  can Mexican-style stewed tomatoes
·         1  can diced tomatoes
·         1  can tomatoes with chiles
·         2  cans diced green chiles
·         1/2 cup green olives, sliced, optional
·         1  package taco seasoning mix
·         1  package ranch salad dressing mix
·         Corn chips, for serving
·         Sour cream, for garnish
·         Grated cheese, for garnish
·         Chopped green onions, for garnish
·         Pickled jalapenos, for garnish

Preparation:


1.       Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot.

2.       Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove.

3.       To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

Helens Hamburger Steak with Caramelized Onion Sauce


An easy-to-make classic featuring tasty hamburger 'steaks' smothered in caramelized onion sauce. It’s a great way to dress up a pound of ground beef and you probably have all the ingredients on hand!" A diner classic!


Ingredients:

·         1 ⅔ lb.   extra lean ground beef, formed into 6 patties
·         1 tbsp.  canola oil
·         4 cups   thinly sliced onions
·         1 can Cream of Celery Soup
·         ¼ cup apple juice
·         2 tbsp. water
·         ½ tsp.    dried thyme leaves, crushed
·         ¼ tsp. ground black pepper
·         2 tbsp.  chopped fresh parsley
·         2 cups hot cooked whole wheat pasta, cooked without salt

Preparation:

1.       Cook beef patties fully, in large non-stick skillet at medium high heat. Remove patties and keep hot.

2.       Cook onions until browning begins, in heated oil in same skillet, stirring often. Reduce heat to low. Cover and simmer for 15 minutes, stirring occasionally.

3.       Stir in soup, juice, water, thyme and pepper. Cover and simmer for 5 minutes. Stir in parsley. Serve pasta onto 6 plates, top with patty and onion gravy.

Quick Meat Sauce with Spaghetti


Instead of opening a jar of sauce, try this easy meat sauce with spaghetti on a week night. Serve with steamed broccoli and garlic bread. The recipe makes enough for 8 servings. If you’re serving only four for dinner, cook 8 ounces of spaghetti and freeze the leftover sauce.


Ingredients:

·         1 pound lean ground beef
·         1 pound whole-wheat spaghetti
·         2 teaspoons extra-virgin olive oil
·         1 large onion, finely chopped
·         1 large carrot, finely chopped
·         1 stalk celery, finely chopped
·         4 cloves garlic, minced
·         1 tablespoon Italian seasoning
·         1 28-ounce can crushed tomatoes
·         1/4 cup chopped flat-leaf parsley
·         1/4 teaspoon salt
·         1/2 cup grated Parmesan cheese

Preparation:

1.       Bring a large pot of water to a boil. Cook pasta until just tender, 8 to 10 minutes or according to package directions. Drain.

2.       Meanwhile, heat oil in a large skillet over medium heat. Add onion, carrot and celery and cook, stirring occasionally, until the onion is beginning to brown, 5 to 8 minutes.

3.       Stir in garlic and Italian seasoning; cook until fragrant, about 30 seconds. Add beef and cook, stirring and breaking up with a spoon, until no longer pink, 3 to 5 minutes. Increase heat to high. Stir in tomatoes and cook until thickened, 4 to 6 minutes. Stir in parsley and salt.

Serve the sauce over the pasta, sprinkled with cheese.

Spicy BBQ Grilled Burgers


No Way, a burger is not just a burger.  Not anymore.  Not after you read this recipe, try it, and take one delicious bite.  I’m about to change your burger loving world forever.  A warning:  Once you try these ridiculously delicious spicy hamburgers, you may never go back to what you once knew.

So unique and tasty.  It combines ground beef with spicy pork sausage; throw in some fresh garlic, onion and peppers for extra zing, and sear to perfection on a blazing grill.


Ingredients:

·         1 lb. ground beef
·         1 lb. spicy pork sausage
·         2 cloves garlic, crushed
·         1 small red & 1 small yellow pepper diced
·         1 small yellow onion diced
·         2 tbs. maple syrup
·         Salt & Pepper to taste
·         Cheddar Cheese

Preparation:


1.       Mix all ingredients (except cheese) in bowl

2.       Form into thick round patties.

3.       Grill over direct heat for about 5-8 minutes per side until juices run clear.

4.       Before completely done, add a scoop of your cheese.

5.       Close all vents and let cheese melt for 2-3 minutes.

Bens Beef Bowl Recipe



This is comfort food at its finest. Ground beef and mixed veggies are topped with a heaping helping of mashed potatoes and melted cheddar cheese.




Ingredients:

·         1 pound ground beef
·         1 16 ounce package frozen mixed vegetables
·         1 8 ounce package shredded cheddar cheese (2 cups)
·         ¼ cup snipped fresh Italian (flat-leaf) parsley
·         Salt and ground black pepper
·         2 cups instant mashed potato flakes
·         2 tablespoons butter, melted

Preparation:

1.       Preheat broiler. In extra-large skillet brown beef over medium-high heat; drain off fat. Stir in frozen vegetables. Cook, stirring occasionally, until heated through. Stir in half the cheese, half the parsley, 1/4 teaspoon salt, and 1/8 teaspoon pepper.

2.       Meanwhile, in large bowl combine 2 cups boiling water, potato flakes, and 1 tablespoon of the butter. Stir until smooth. Season with salt and pepper; set aside.

3.       Divide beef mixture among four 16-ounce broiler-safe dishes. Top with potatoes; sprinkle remaining cheese. Broil 3 inches from heat for 2 to 3 minutes, until cheese is melted. Drizzle with melted butter; sprinkle with remaining parsley. Makes 4 servings.
